Creamy, earthy and sweet, the fontina cheese used in gnocchi alla bava craves one of those typical regional floral, fruity, mineral white wines of Valle d’Aosta. Consider a Prié Blanc from Morgex - the delicately flavoured grape of Europe’s highest white wine vineyards. The appellation here is “Blanc de Morgex et de La Salle DOC”. Great examples are made by Ermes Pavese and Cave Mont Blanc. Alternatively, go for an aromatically dense and complex Petite Arvine from Les Crêtes (available at Cuculo), Lo Triolet, Grosjean or others. If you’re more for a red then look at the red-fruit-crunch and smoky note of Fumin. The aforementioned wineries also make great examples of this wine
