Today’s recipe is an Italian classic recipe from the north of Italy. Coming from the alpine region of Valle d’Aosta I always loved cheese and in particular the Fontina cheese with a bouncy texture and a grassy intense flavour of the alpine pastures.
“Bava” means literally drool.. but it refers to the strings that the cheese makes when it’s cooked.
You should be able to find the fontina cheese in any good Italian delicatessen. In alternative you can use raclette cheese or any tasty cheese that melts well.
Gnocchi are very easy to make. They can be frozen in portioned bag and cooked from frozen, therefore ideal to make in advance and ready for a last minute dinner.
