Every Friday, I buy some “acciughe al verde” (anchovies in green sauce) see MacNay Travel and Wine, from Mirella, the smiley and kind lady managing a food stall at the weekly market in Torre Pellice, where we live. We like them as an antipasto during the week.
Every Friday I stare at three big metal cans full of salted anchovies thinking of the many tasty uses in the local cuisine… Bagna Caöda (anchovies and garlic hot sauce for dipping seasonal vegetables), anchovies in a red sauce, anchovies in a green sauce.
I should really try to make the “Anciove al verd” instead of buying them.. And so I did it. I asked my mum and aunty their recipe and method and here it is.
